1 c. rice, 1 c. raisins, 2 tbsp. butter, 1 1/2 tsp. salt, 1 quart milk, 6 or 8 eggs, 1 c. sugar, 2 1/2 tsp. vanilla, cinnamon.

Directions:
Directions:
Boil rice with 1 tsp. salt and about 1 1/2 quarts water. Stir often to keep rice from sticking. Beat eggs, sugar, 1/2 tsp. salt, milk and vanilla together. This makes the custard for the pudding. When the rice is cooked, run cold water over it and drain. Add butter, raisins and half the custard and mix well together. Put into buttered loaf pan or Pyrex baking dish. Pour the remaining custard over top and bake 1 hour at 350º until firm and golden brown. Can be cut like a cake. You may add cinnamon to custard mixture or sprinkle some on top.
