Four 1/4 inch thick cutlets, 1 1/2 tsp. fresh grated lemon rind, 1/2 tsp. crumbled dried sage, 2 tbsp. fresh lemon juice, 1/2 c. fine dry bread crumbs, 3 tbsp. vegetable oil.

Whisk rind, sage, lemon juice, 1 tbsp. oil in a shallow dish which will hold the cutlets in one layer. Pat dry the cutlets and marinate about 20 min. Turn them after 10 min. Dredge the cutlets in the bread crumbs. In a heavy skillet, heat the oil over moderate heat. Saute cutlets until golden. Garnish with sage and lemon.
