Shells: 1 c. flour, 1/4 c. melted Crisco, 1 egg, salt to taste, 1/8 c. white wine. Filling: Ricotta, chopped citron or mixed candied fruit, sweet chocolate chopped in small pieces, confectioner's sugar.

Shells; Add Crisco, egg, wine, and salt to flour and mix. Roll out dough thin, like you would a pie crust. Cut in squares and wrap around cannoli forms. Fry in deep fat until browned. Slip off forms and drain on paper towels. Filling: Mix ricotta, fruit, chocolate and sugar until desired sweetness. Keep filling in bowl in refrigerator and fill shells just before serving. Sprinkle cannoli with confectioner's sugar.
