1 c. sugar, 1/4 tsp. salt, 2 1/2 tbsp. quick-cooking tapioca, 4 c. sliced fresh peaches, 1 tbsp. lemon juice, pastry using 2 c. flour, 1 tbsp. butter.

Directions:
Directions:
Mix sugar, salt, tapioca, peaches and lemon juice in a bowl. Roll out half pastry and line a 9 inch pie pan with it. Roll out remaining pastry and cut several slits or a fancy design near center. Fill pastry shell with peach mixture and dot with butter. Place on top crust and seal edges. Bake at 425º for 55 minutes or until crust is browned.
