5 pounds yellow squash
3 tbsp butter, melted
1/4 c. sugar
2 tbsp. dehydrated onions
2 eggs
1 c. bread crubs
1/2 tsp. black pepper
cheddar cheese, optional
Paprica, optional

Directions:
Directions:
Cut and slice into 1/2 inch pieces of squash, Fill 5 quart pot w/e full of water and bring to boil. Add squash, coover and boil for 3-5 minutes or until tender. Drain well and mash slightly. In large bowl or food processor combine squash with remaining ingredients. Mix well. Place into a 3 quart or 9x13x2 inch casserole dish. Bake uncovered at 350º for 15-20 minutes. May top with grated cheese and sprinkle with paprika during the last few minutes of baking.
