2 lbs. pea beans
1/2 lb. salt pork
1/4 cup sugar
1/2 to 2/3 cups molasses
2 tsp. dry mustard
1/2 tsp. pepper
dash salt
1 medium sweet vidalia onion (Do not use a spanish onion)

Directions:
Pick over beans and soak in water over night. Rinse and parboil till skins crack when you blow on them (about 10 minutes). Cut onion into quarters and put in bottom of bean pot. Add beans on top of onions. Cut through the rind of the salt pork about a half inch in three places. Leave it whole and put it on top of the beans. Mix together the sugars, molasses, mustard, pepper and salt. Add 2 cups boiling water to the sugar mixture and combine well. Pour over beans. Add more water if necessary to cover the beans 1/4 inch. Bake at 300 degrees for 6 hours. Check every hour and add more water if necessary. Can cook at 350 for 4 hours if you need them faster. Do not stir the beans!!!!
