3 medium baking potatoes, freshly baked
8 oz. light cream cheese softened
1/2 cup light mayonnaise or salad dressing
1/4 cup finely chopped onion
1/3 cup sliced pitted ripe olives
1/2 teaspoon dill weed
1/2 teaspoon salt
1 can (6 1/8 oz. or Costco’s 7 oz.) Pink Salmon, drained

Directions:
Directions:
Preheat oven to 350º. Cut potatoes in half lengthwise.
Scoop out potato leaving shell. Place potato in a large bowl and mash. Add cream cheese, mayonnaise, onion, olives, dill and salt. Mix well.
Fold in salmon.
Spoon mixture into potato shells. Bake 15 to 20 minutes.

Makes 6 servings if this is a side dish. Otherwise, count on one potato per person.
