2.5 pounds ground chuck (I've tried a veggie meat too, not bad)
2 tablespoons oil
1 small red onion, chopped into small pieces
5 garlic cloves, minced
1/4 teaspoon pepper
1/2 teaspoon garlic salt
28 oounces canned whole tomatoes (chop and use juice too)
16 ounces tomato paste
4-1/2 tablespoons chili powder
2 tablespoons cumin
1 tablespoon sugar
4 cups water
1 can (26 ounces) "ranch style" beans (if you can find that brand, otherwise, just beans of your choice)
2 large jalapenos
1 habanero (you can skip this if you don't like too spicy)
1 serrano pepper
"splash" apple cider vinegar
2 green peppers, chopped
1/4 cup masa harina (corn flour)
salt to taste

Directions:
Directions:
Pour oil into a large stockpot over medium heat. Add onions, garlic, pepper, and garlic salt. Add meat and brown it, folding the onions, etc., into it as you go.
Add water, tomato paste, tomatoes with their juice, chili powder, cumin, and sugar.
Mix in the beans, green peppers, and spicy peppers. Give it a splash of apple cider vinegar.
Simmer vigorously for 2 hours.
When it's ready, mix the masa harina with 1/2 cup water in a separate mixing bowl and fold into chili as you stir. You can add salt as well if you'd like at this point.
Serve with shredded cheddar cheese, sour cream, and saltine crackers!

This chili recipe is my favorite. I got it from my aunt Susie Janik but have altered it slightly. When I first moved to ojai, I entered a chili cook off and I needed a recipe, so Susie obliged. For the cook off, we had a disco theme and called it "disco stew" (which is also a reference to a "Simpsons" character) we wore jumpsuits and afro wigs, had a disco ball and music blasting! It was a ton of fun! and although I didn't win, it did give me a chance to really perfect this version of a classic chili. It will last you for a few days and gets better as each day passes. It will probably also give you heartburn because it's super spicy but it's worth it!
