1 (6-7 oz) jar marinated artichoke hearts, drained with 3 T oil reserved
1 lg onion, chopped
3 lg garlic cloves, chopped
1/2 c purchased pesto
1/3 c grated Parmesan cheese
sliced black olives
cherry or grape tomatoes
1 pkg prepared penne pasta

Directions:
Directions:
Heat 3 T reserved oil from artichokes in heavy pot over medium-high heat. Add onion and garlic and saute until onion is tender, about 7 minutes. Add artichoke. Simmer until sauce thickens slightly, bout 8 minutes. Add pesto and simmer a minute longer. Mix in prepared pasta and cheese. Season with salt and pepper to taste. Add black olives and tomatoes and toss to mix. Serve warm or cold.
