3 large boiling potatoes.
1/4 c. heavy cream.
2 tbsps. butter, softened.
1/4 c. sour cream.
1 pkg. (3 oz.) softened cream cheese.
1/2 tsp. salt.
1/2 tsp. black pepper.
1 tsp. fresh of freeze-dried chives (optional).
Directions:
Directions:
Peel potatoes; cut into quarters or eighths; boil in salted water until tender. Drain potatoes and IMMEDIATELY mash them while adding heavy cream. Mix in butter, sour cream and cream cheese until well blended. (For creamy, whipped potatoes heavy cream may be added until desired consistancy is reached.) Season with salt and pepper. Garnish with chives if desired.
