Crust
Graham cracker crumbs
1 stick butter room temperature

4 large bars cream cheese room temperature
1 c sugar
1 tsp vanilla
5 egg whites room temperature

Topping
2 c sour cream
4 T sugar
1 tsp vanilla

Directions:
Directions:
Preheat over 375º
In smaller bowl, beat egg whites until really stiff.
Gradually blend in sugar when egg whites are stiff and set aside.
In larger bowl, blend cream cheese a little at a time until creamy. Gradually (that is the secret) add in egg whites beating until creamy. Add vanilla.
Bake at 350º for 25 minutes. Take out of oven leave to cool. Reset oven temperature to 475º.
While cooling, beat sour cream with spoon and add sugar and drop of vanilla. When oven reaches 475º and cake cooled carefully pour sour cream around sides of pan and blend towards the middle. Put back in over for 5 minutes.
You can color the sour cream for Christmas.
