1 (6-7 oz) jar marinated artichoke hearts, drained with 3 T oil reserved
1/2 c pesto
1 lg onion, chopped
3 lg garlic cloves, chopped
1/3 c grated parmesan cheese
sliced black olives
cherry or grape tomatoes
salt and pepper to taste
1 bag penne pasta, prepared

Directions:
Directions:
Heat 3 T reserved oil in heavy large pot over medium-high heat. Add onion and garlic and saute until onion is tender, about 7 minutes. Add artichoke. Simmer until sauce thickens slightly, about 8 minutes. Add pesto; simmer one minute longer. Mix in prepared pasta and cheese. Season pasta with salt and pepper. Add grape tomatoes.
