1 pound ground beef or turkey
1 onion, chopped
¼ teaspoon garlic powder
1 pound can diced tomatoes
8 ounce can tomato sauce
1 package taco seasoning
4 ounce can diced green chilies
16 ounce carton ricotta cheese
2 eggs
1 pound mozzarella cheese, grated
10 corn or flour tortillas cut in half

Directions:

Cook meat, onions, and garlic powder for 10 minutes. Add diced tomatoes, tomato sauce, taco seasoning, and green chilies, simmer 10 minutes. Divide ricotta cheese into two bowls. Slightly beat an egg into each bowl of ricotta cheese. In a 3-quart glass baking dish, layer as follows: 1/3 the meat mixture, ½ the tortillas, ½ the ricotta cheese, and ½ mozzarella cheese. If you wish, lightly salt, then layer: 1/3 meat mixture, remaining tortillas, remaining ricotta cheese, and remaining mozzarella and top with remaining meat mixture. Cover dish with plastic wrap and poke a small vent hole. Microwave on high for 12 minutes, then rotate dish. Microwave dish on high for 5 minutes more.
