1 ½ to 2 pounds ground beef
1 medium onion, chopped
1 teaspoon salt
1/8 teaspoon pepper
2 8 ounce cans tomato sauce
1 cup ricotta or cottage cheese
1 8 ounce package cream cheese
¼ cup sour cream
1/3 cup chopped green pepper
1/3 cup chopped green onion
8 ounce noodles, cooked and drained

Directions:
Directions:
Combine ground beef and onion in skillet; cook until beef is browned. Add salt, pepper, and tomato sauce; simmer slowly. Combine ricotta (or cottage cheese), cream cheese, sour cream, green pepper, and green onion, set aside. Place half noodles in bottom of 3 quart casserole dish. Top with cheese mixture and remaining noodles. Pour meat mixture over top. Bake 30 minutes at 350 degrees.
