Ricotta Thyme Spaetzle Recipe

4 T butter, plus 1 t
2 C flour
Kosher salt and black pepper
4 eggs
1/3 C water
1 C whole milk ricotta
1 T thyme, chopped

Directions:
Directions:
1.Bring a large pot of water to boil over medium heat.
2.Melt 4 T of the butter in a large skillet and reserve.
3.Brush the interior of a large serving bowl with the remaining 1 T of butter and set aside.
4.Whisk the flour, salt and pepper, to taste, together in a large bowl.
5.In a medium bowl whisk the eggs and water well and fold in the ricotta and thyme.
6.Pour the wet ingredients into the flour and whisk well until smooth. The batter should be the consistency of a thick pancake batter, add more water, if needed.
7.In batches, with a large rubber spatula, hold a colander over the boiling water (not touching it) and push the batter through the holes into the water.
8.Cook each batch until they float, about 1 min.
9.Usig a slotted spoon, lift them out of the water and shake off the water, and drop them into the buttered bowl.
10.Bring the skillet w/ the melted butter to a simmer over medium heat and cook until the butter begins to brown a bit. Add the spatezle and toss well to coat and then transfer back to serving bowl.
