Country Fried Steak Recipe

3 lbs round steaks
1 5 oz can evaporated milk
2 T green Tabasco sauce
1/2 t salt
2 C all-purpose flour
2 t paprika
3/4 t garlic powder
1 t salt
1 t cracked pepper
vegetable oil for frying

CREAM GRAVY:
2 1/2 C milk
salt and pepper

1.Trim steak, cut into 6-8 smaller pieces.
2.Pound thin between plastic wrap.
3.Combine evap. milk, tabasco sauce, and salt in one bowl.
4.Put 1 C flour in another bowl.
5.Add other cup flour, paprika, garlic, salt and pepper in another bowl.
6.Dredge steak in plain flour, then in the evaporate. milk mixture, then in the seasoned flour mixture. (save the seasoned flour mixture for the gravy)
7.Set aside until all meat is coated
8.Heat 1-2 inches oil in heavy frying pan.
9.Fry steaks approximately 2 mins per side until golden brown.
10.Drain on paper towels - serve w/ grave, mashed potatoes and cheddar biscuits.
11.GRAVY:
12.Pour off all but 6 T of fat from the frying pan.
13.Add 6 T of the left over seasoned flour and mix with the oil - make sure you have turned down your heat a bit.
14.Stir together until they are combined and then slowly add the 2 1/2 C milk. After stirring all together let this come to a small boil and then stir until it thickens - this will take a while but it works.
