8 ounce ground sausage, cooked and drained
1 onion, chopped
1 green pepper, diced
1 stalk celery, diced
1 tablespoons garlic (minced garlic works well)
1 teaspoon cayenne pepper
1 ½ cups Uncle Ben’s rice
14 ounces chicken broth
1 can diced tomatoes
2 green onions, diced
1 pound small or medium shrimp (peeled and deveined)

In 5-quart Dutch oven over medium heat, cook sausage and drain on paper towel. Add onions, peppers, celery to drippings, cook until tender then add garlic and cayenne pepper. Add rice, and broth plus enough water to equal 3 cups water. Add sausage when it comes to a boil, turn heat down, and simmer 15 minutes or until rice is done. Stir in tomatoes, green onions, and shrimp, cook 5 minutes longer or until shrimp is done!
