1 Stick, plus 1 T unsalted butter
4 oz semisweet chocolate, with at least 60% cocoa solids
2 eggs
3/4 C superfine sugar (called Bakers sugar)
3 T all-purpose flour
4 Ramekins (2/3 C to 1 C capacity)

1.Place a baking sheet in the over and preheat to 400
2.Butter the ramekins with the 1 T butter
3.In a glass bowl suspended over a pan of simmering water, melt the chocolate and the 1 stick butter, then set aside to cool a little bit.
4.In another bowl, mix the eggs with the sugar and flour with a hand whisk. Add a little bit of the cooled chocolate to tempura the eggs so they don't cook. Beat in the rest of the chocolate mixture with the egg mixture.
5.Dividie mixture between the ramekins. Bake for about 20 mins, or until the tops start to crack.
6.Serve hot with ice cream or whipped cream.
