6 or 7 plum tomatoes
2 cloves garlic, minced1 T EVOO
1 t balsamic vinegar
6-8 fresh basil leaves, chopped
Salt and pepper, to taste1 baguette
1/4 C EVOO

Directions:
Directions:
1.Parboil tomatoes for one minute in boiling water that has just been removed from burner.
2.Remove skins from tomatoes
3.Cut tomatoes in half and remove the seeds
4.Place rack of oven in top rack position and turn oven to 450 to preheat
5.Chop up tomatoes and add garlic, and 1 T EVOO, and vinegar in bowl and mix.
6.Add chopped basil and add salt and pepper to taste.
7.Slice baguette and coat one side with EVOO with pastry brush.
8.Place on cookie sheet, EVOO side DOWN.
9.Toast for 5-6 minutes, until golden brown.
10.Align bread on serving platter, EVOO side UP and serve with tomato topping in a separate bowl to allow people to serve themselves.
