1 cup all-purpose flour
1 tsp baking powder
1/4 tsp baking soda
1 tsp cinnamon
1/2 tsp nutmeg
2 cups slightly crushed cornflakes
1/2 cup butter
1/2 cup granulated sugar
1/2 cup brown sugar
2 eggs
1/4 tsp salt
1 cup nuts
1 cup shredded carrots
1 cup chopped dates
1/3 cup milk
1 tsp vanilla

Directions:
Directions:
Sift flour, baking powder, baking soda, salt, cinnamon, nutmeg together twice, then sift into bowl. Stir in cornflakes.

Using an electric mixer, cream together the butter, granulated sugar, brown sugar, until fluffy. Add the eggs and beat thoroughly. Stir in the carrots, walnuts, dates, milk and vanilla.

Add the flour mixture and stir until well blended. Drop by tablespoonfuls onto lightly greased cookie sheet about 2 inches apart. Bake in a 375º F oven for about 10 to 12 minutes or until lightly brown.
