24 to 26 small boiling onions
2 teaspoons salt
2 tablespoons butter or margarine
2 tablespoons all-purpose flour
1 1/2 cups milk
1/2 cup (2 ounces) shredded mild Cheddar cheese
1 1/2 tablespoons dry sherry

Directions:
Directions:
Peel onions; place in a large sauce pan. Add several inches of water; sprinkle with salt, and bring to a boil. Reduce heat, and cook 10 to 15 minutes or until tender. Drain well, and place onions in an 8-inch square baking dish.

Melt butter in a heavy saucepan over low heat; add flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add milk; cook over medium heat, stirring constantly, until thickened and bubbly. Add cheese, stirring until cheese melts and sauce is smooth. Stir in sherry, and pour sauce over onions. Bake at 350º for 20 minutes.
