4 egg whites, room temperature.
1/4 tsp. cream of tartar.
1 c. sugar.
1 tsp. vanilla flavoring.
1 c. whipping cream, whipped. (Sweeten
and add Vanilla flavoring to taste.)
Assorted sliced fresh fruit (e.g., strawberries,
kiwi, peaches, berries).

Heat oven to 300 F. Line large cookie sheet with brown or parchment paper. Draw 10-inch circle on paper. In large bowl, beat egg whites and cream of tartar until foamy. Gradually add sugar, beating at high speed until sugar is dissolved and stiff peaks form. Beat in vanilla. Spoon meringue onto circle on prepared cookie sheet, shaping in 10-inch circle. Build up sides with back of spoon. Place in 300 F oven. REDUCE HEAT TO 250 F. Bake for 50 to 60 minutes until firm and dry to touch. Remove from oven, cool completely on wire rack. CAREFULLY remove meringue from paper and place on serving plate. Fill center with whipped cream and arrange sliced fruit over whipped cream. Refrigerate, covered, up to 4 hours until serving time.
