1/4 c. butter
1/4 c. flour
2 1/2 c. whole milk
1 tsp. kosher salt
1/8 tsp. pepper
1 1/4 c. cheddar cheese, shredded
5 large Yukon Gold potatoes, peeled and thinly sliced (5 cups)

To make the sauce, melt the butter over low heat. Stir in the flour, salt, and pepper. Cook over low heat about 2 minutes. Gradually add in the milk. Cook and stir until thickened and bubbly. Cook and stir 1 to 2 minutes more. Remove from heat. Add 1 cup of the cheddar cheese and stir until melted. Place half of the sliced potatoes in a greased 2 quart casserole dish. Cover with half of the cheese sauce. Repeat layers. Bake covered at 350 degrees for 45 minutes, stirring once. Uncover and bake about 30 minutes more until potatoes are done. Sprinkle the remainder 1/4 cup cheese on top during the last 5 minutes of cooking.

For a large group double the recipe and place in 13x9 pan. I use the orange colored cheddar cheese. Shred yourself - not the bagged stuff.
