1 can (7 oz) fat free evaporated milk
1/2 c. yellow cornmeal
1/4 tsp salt
1/4 tsp pepper
1/2 c shredded zero fat cheese
1 egg, beaten well
1 box frozen broccoli, thawed drained and chopped
1/4 c. chopped roasted red peppers

Preheat oven to 375º. Spray a 2 quart baking dish with cooking spray. Place evaporated milk in a medium pan. Heat over medium heat. Gradually add cornmeal, cook and stir until thickens. Remove from heat, stir in pepper and 6 tablespoons of cheese until it melts. Beat egg in bowl. Add 1/4 cup of milk mixture, stirring constantly. Fold in broccoli, peppers and salt. Pour all into prepared baking dish. Bake for 50 minutes or until knife comes out clean. Sprinkle with the remaining 2 tablespoons of cheese.
