Ingredients: Kibbi: Two pounds lean beef (I use a roast and grind it myself) 2 2/3 cups burghul (cracked wheat) 1 large onion, minced 2 tbsp. salt 1/4 tsp. pepper 1/8 tsp. cinnamon 1/8 tsp. allspice 1/2 cup melted butter
Filling: 1/4 cup pine nuts 2 tbsp. butter 1/2 pound ground sirloin 1 onion, chopped Salt and pepper to taste

Directions:Cover the cracked wheat with water and let it stand for 10 to 15 minutes. Put roast through the food processor and grind well. Add onions and process through food processor a second time. Drain the cracked wheat and mix with the meat and onions. Add the salt, pepper, cinnamon, and allspice and knead until thoroughly mixed. Dip your hands in ice water to keep the mixture cold while kneading. Place the mixture through the food processor a third and final time. Butter a 9 x 13 baking pan. Place a 1/2 inch layer of the meat mixture on the bottom of the pan. Brown the pine nuts in the 2 tbsp. butter until slightly browned. Add the ground beef and onion and cook until browned and onions are translucent. Add salt and pepper. Place filling over the layer of basic kibbi in the pan. Layer the rest of the basic kibbi over the filling and smooth. Score the top 1/2 inch deep with 1 inch diagonals. Pour the melted butter over the kibbi and bake in a 400º oven for 30 minutes. Lower the oven temperature to 300º and bake for another 20 to 30 minutes until golden brown. Cut along the diagonal wedges to serve. |

Notes: Diran taught me how to make kibbi when we were first married. If you want to make kibbi balls, take the basic kibbi recipe and make a plum sized ball. Use your finger to hollow out the center. Place a tsp. full of the filling into the hole and carefully close the hole. Arrange the kibbi balls into a pan that is well oiled with olive oil and bake at 375 for 30 minutes turning occasionally. Or, you can deep fry.
