5 c. chicken broth
1 c. celery, chopped
1 c. carrots, chopped
1 medium onion, diced
3 c. sliced mushrooms (older is better)
4 tbsp. butter, divided
1 tbsp. flour

1 egg
1 tbsp. water, scant
2 tbsp. flour, heaping

Directions:
Directions:
Cook onions in 2 tbsp. butter until soft. Add the 3 c. mushrooms (~ 1/2 lb). Cook until the mushrooms are dark and set aside. Saute the carrots and celery in 2 tbsp. butter until the celery is transparent yet still crunchy. Sprinkle 1 tbsp. flour over the celery and carrots and season with salt and pepper. Bring the chicken broth to a boil and add all the vegetables. Cover the pot and simmer for 15 min.
With a fork, beat together the egg, water and at least 2 tbsp. of flour until the mixture is smooth. The mixture should be elastic yet liquid enough to drop from a spoon. Drop spoonfuls of the noodles from a spoon into the simmering soup. Cover and simmer an additional 3 min.

I always up the amount of mushrooms that I put in. Any kind or mixture of mushroom is good.
