3 c. cubed raw potatoes
2 eggs
1/4 c. flour
1 small onion, quartered
1 tsp. salt
1/4 tsp baking powder

Directions:
Directions:
Wash, peel and cut up potatoes. Pat dry with paper towel. Put all ingredients into blender container. Cover. Press "chop" button for 10 seconds. Use spatula to push potatoes down if necessary. Stop motor when using spatula. Spoon batter onto hot, greased griddle, using about 1/4 cup for each pancake. Brown on one side, then turn once to brown the other side. Makes about 4 servings.
