Ingredients: Fruit Ingredients: 1 Medium Can Chunk Pineapple 1 Large Can Sliced Peaches 1 Large Can Pear Halves 1 Large Can Apricot Halves 1 Large Can Mandarin Oranges Maraschino Cherries Cinnamon
Sauce Ingredients: 2 tbls. Flour 1/2 Cup Packed Brown Sugar (I use light) 1 Stick Butter 1 Cup Hollands Cooking Sherry

Directions:Drain all fruit. Cut pears and peaches in half if they are large. Arrange fruit in alternate layers in a greased large casserole dish (3 quarts). The Pampered Chef stoneware casserole works well, but no one wants to clean it. Put cherries on top and sprinkle lightly with cinnamon.
In top of a double boiler combine sauce ingredients. Cook over hot water, stirring until smooth and thickened. Pour over fruit. Cover and let stand in the refrigerator overnight. Bake in a 350º oven until hot and bubbly (35 -45 Minutes). If you don't have a double boiler just use a non-stick pot, but be sure and stir it constantly. |

Notes: If you like coconut this is really good. Use Archway Coconut Macaroon Cookies. Crumble 2/3 and place in bottom of casserole before you put the fruit in and then use the remaining 1/3 crumbles cookies on top. This fruit casserole is a standard and favorite for either Christmas Brunch or dinner. It' wouldn't be Christmas without it.
