Notes: Sweet potatoes cooked in the crock pot allow the sugar to caramelize for a wonderful flavor. Simply wash potatoes and put in crock pot when damp. Cook on low till tender...all day if you have a lot of potatoes or "other fish to fry". The beauty of this recipe is there's no last minute prep for this dish if you use for Thanksgiving dinner. I don't cook sweet potatoes any other way now!
1/2 C maple syrup would make a great change from brown sugar.
