5 medium to large sweet potatoes
1/2 stick of butter
1/2 c brown sugar (or half-Splenda, half brown sugar mix) or 1/2 C maple syrup
1 t vanilla
1 t cinnamon

Directions:
Bake sweet potatoes in oven or crockpot till tender when pierced with a fork. Cool, peel, and slice 1/2" thick...arrange in greased casserole dish. Melt butter and mix rest of ingredients. Pour over potatoes. (At this point you can put in fridge ahead of time.) Bake at 350 about an hour. At the end you can cover with marshmallows and bake 5-10 minutes longer if desired.

Sweet potatoes cooked in the crock pot allow the sugar to caramelize for a wonderful flavor. Simply wash potatoes and put in crock pot when damp. Cook on low till tender...all day if you have a lot of potatoes or "other fish to fry". The beauty of this recipe is there's no last minute prep for this dish if you use for Thanksgiving dinner. I don't cook sweet potatoes any other way now!

1/2 C maple syrup would make a great change from brown sugar.
