1 dozen red bell peppers
1 dozen green bell peppers
1 dozen medium sweet onions (like 1015)
2 c sugar
2 c cider vinegar
1 t salt

Directions:
Directions:
Remove seeds and stems from peppers. Chop peppers and onion coarsely in food processor. Add boiling water to cover and let stand 5 min. Drain. Add 2 c sugar, 2 c vinegar, and 1 t salt. Bring to a boil and cook 5 minutes...stirring frequently. Pour into hot, sterilized pint jars and seal. Store in fridge.

We kept this relish made up in fridge at the home ec house in college with soda crackers nearby. Anyone hungry just helped themselfes. It's really pretty...makes good Christmas gifts. Now part of the peppers could be yellow for a confetti look, but in the 60's yellow bell peppers hadn't been developed.
