12 carrots
1 1/2 tsp. salt
1/2 tsp. ground pepper
2 Tbsp. minced fresh dill or fresh parsley



Directions:
Directions:
Preheat oven to 400º.

If carrots are thick, cut into half lengthwise; if not, leave them whole. Slice carrots diagonally into 1 1/2 inch slices. Toss in bowl with other ingredients. Place on a baking sheet in one layer and roast in the oven for 20 minutes.

Toss the carrots with minced dill or parsley, season to taste and serve.
