"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Directions:
Mix peaches, sugar, cornstarch and flavoring. Bring to a boil while stirring constantly, boil 1 minute. Then cool.
Slightly soften about 2 or 3 tbsp of cream cheese and mix with 2 or 3 tbsp of sugar. Spread over entire bottom and sides of baked and cooled pie crust. Layer the cream cheese and whipped topping mixture onto of the first cream cheese layer.
Make a nice layer of the sliced peaches on the bottom of the crust covered with 2 types of cream cheese mixtures. Cover with the cooked and cooled pie filling. Refrigerate until ready to serve (at least 2 or 3 hours). Top with cool whip or whipped cream.
