3/4 c Shortening or Oleo
1 c Sugar
1 Egg
1 c Seeded Persimmons
3/4 tsp Soda
2 c Flour
2 tsp Baking Powder
1/4 tsp Salt
1 tbsp Vanilla
3/4 c Nuts
3/4 c Coconut
Directions:
Directions:
Preheat oven to 375º
Cream sugar and shortening until light and fluffy. Add egg and beat well. Stir soda into persimmons, add to creamed mixture. Add sifted flour, baking powder and salt. Add vanilla, nuts and coconut. Drop on greased cookie sheet. Bake for 12 -15 minutes (can freeze),
Yield 10 dozen
