1 Head Napa Cabbage, Shredded
1/2 Red Onion, Julienne
2 Fuji Apples, Julienne
1 1/2 tsp Celery Seed
1 tbsp Dijon Mustard
1/4 c Cider Vinegar
1 Large Shallot, Brunoise
3/4 c Extra Virgin Olive Oil
1 tsp Honey

Preparation
Mince shallot and place in bowl with vinegar, honey, mustard and salt.
Chop rest of the vegetables, when finished, slowly whisk in the olive oilto the shallot vinegar. Add mustard to emulsify. Dress napa cabbage and apples with the vinegarette then add the celery seed. Allow to marry in the refridgertor for 30 minutes before serving.
Serve with Apple Stuffed Pork Loin, Chicken, or any hearty flavored fish.
