One 3-4 lb chicken, cooked and cut up
8 cups water
1 tsp. salt
1 tsp pepper
1 onion chopped
2 cups diced celery
2 cups diced carrots
2 cups diced potato
2 cups uncooked quick rice
2 chicken bouillon cubes
2 cups water
One 16 oz Velveeta cheese, cubed

Directions:
Directions:
Bring first 4 ingredients to a boil in Dutch oven. Cover, reduce heat, simmer 1 hour until chicken is tender. Cut up chicken and return to broth Add next 6 ingredients. Boil, reduce heat, simmer 1 ½ hours, stirring occasionally. Add cheese, stirring often until cheese melts. Do not boil.
