3 lb. boned shoulder or leg of veal, tied long and thin, 4 onions sliced thin, 5 glasses water, 4 carrots sliced, 4 celery sliced, 1/2 lb. mushrooms, wine.

Directions:
Directions:
In a pot saute in a small amount of olive oil the meat until well browned. Add onions, and simmer with the meat, then add water, carrots, and celery and cook gradually. Add more water if necessary. Add mushrooms. After fully cooked, about 25 min. per pound of meat, add wine and serve.

After the meat has browned, the entire process should take about 1 hour and 15 minutes more to cook.
