Ingredients: 3 tablespoons walnut pieces; 2 teaspoons balsamic vinegar; black pepper; 1 1/2 tablespoons olive oil; 3 cups canned sliced beets, drained; salad greens; 1/2 cup crumbled blue cheese

Directions:Preheat oven to 50:
Spread walnuts on jellyroll pan. Bake until golden and fragrant, (about 7 minutes). Cool then roughly chop.
In bowl, whisk together vinegar, salt and pepper to taste. Whisk in oil until combined. Add beets and walnuts; toss until coated. Serve on a bed of greens topped with blue cheese. |

Notes: This is even better if you use fresh beets and roast them. Wrap each trimmed beet in foil and scrunch the ends to seal. Place the packages on a baking sheet in case the juices leak. Roast in an oven 375 degrees for 30 minutes up to an hour depending on the size. A knife should pierce easily. (let cool until you can handle,they will peel easily with just you hands. (Best to wear gloves unless you like red fingers)
