5 lb. rump pot roast or eye round, 1 c. each finely sliced carrots, onions, celery, 2 halved garlic cloves, 1 tbsp. thyme, 2 bay leaves, 1/4 c. minced parsley, 1 tbsp. salt, 1/4 tsp. pepper, 4 c. red wine, 1/2 c. olive oil.

Mix ingredients together in pot and marinate meat all day or overnight. Remove meat from marinade and dry well and brown in olive oil. When meat is browned well, remove and place in a heavy pot with a cover and pour marinade over it, Cover and bake at 350º for 3 1/2 hours. Remove meat from gravy. Strain the gravy and keep the cooked vegetables. Degrease the gravy and mash the vegetables and add back to the gravy. Slice the roast and spoon the vegetable gravy over the meat.
