1/2 small red onion, finely chooped
Pickled jalapeno peppers, minced (to taste)
1 medium tomato, cored, chopped, and seeds removed
2 cloves garlic, minced
10 sprigs cilantro, chopped
3 ripe Haas avocados (the very dark "bumpy" avocados)
Juice of 1 lime
Kosher salt (to taste)

Directions:

Mix onion and jalapenos with tomato, garlic, and cilantro, set aside.

Halves the avocados, reserving the pits, and scoop out fruit.
Roughly mash (I use potato masher) and flavor with salt and lime juice.

Mix in the onion/jalapeno/tomato mixture.

Place pits into guacamole to help slow down the darkening process and cover with plastic wrap. Make sure the wrap touches the surface of the guacamole.
