1 (14-oz.) can broth (chicken, vegetable or beef)
1 (15.5-oz.) can dark beans, rinsed and drained
1 (15.5-oz.) can light beans, rinsed and drained
1 (15.5-oz.) can corn, drained
1 (15.5-oz.) can white hominy, drained
1 (12 - 16-oz.) jar salsa
1 (12-oz.) bottle beer
Add: chicken, vegetables or beef tips (cooked and cubed)

Combine ingredients in a soup pot. Bring to a boil, then simmer 15 to 20 minutes. Serve in bowls over tortilla chips. Garnish with green onion, shredded cheese and sour cream, if desired.

This is a quick and easy recipe. It is very flexible and can easily be customized to your taste. I prefer to use chicken broth and grilled or boiled chicken. I use black beans and navy beans. I often add extra corn and beans if I need to expand the servings a bit. This recipe is easy to double or triple for a larger group.
