2 quarts soft water
2 cups green split peas
1 branch celery, coarsely chopped
1 large carrot, chopped
1 small onion, chopped
1 pinch cayenne
1 Bay leaf
1 to 2 t. salt, to taste
1/2 t. pepper
1 tsp thyme

Bring everything to boil. Reduce to simmer and cook 90 to 120 minutes until peas are tender. I mash soup with my potato masher. It could be put in slow cooker on low for about 8 hours.

This makes a great meal. We used to double the recipe and have it on Christmas Eve for many years - usually with a 3 foot long sub. Of course you can add ham or a ham bone.
