3 medium sweet potatoes cubed
3 hard boiled eggs chopped
1 green apple, chopped with skin still on
5 strips of bacon, roughly chopped

Dressing:

4 tbsp olive oil
1 tbsp chives, chopped
4 tbsp mayonnaise
2 tbsp fresh lemon juice
1 tbsp Dijon mustard
Sea sale and freshly ground pepper to taste.

Directions:
In large saucepan over a medium heat add sweet potato cubes, fill with water and bring to a boil. Cook until tender. In small skillet over a medium heat, fry the bacon until bacon is crispy. Hard boil the eggs. When ready peel and chop them.

In small bowl combine all the dressing ingredients and mix thoroughly. In large bowl combine the cooked potatoes, eggs, apple and bacon and top with the dressing.
