1 lb. boneless chicken breast or thigh
3 T. Canola Oil
I chopped onion
3 cloves garlic, minced
1 jalapeņo pepper, minced
1 qt. chicken broth
3 cups frozen corn kernels
1 can black beans
Juice of 1 lime
1/2 tsp. ground red pepper or Tabasco
1/2 cup minced cilantro
Shredded Monterey Jack cheese
Crumbled tortilla chips or Tri-color tortilla strips (now sold with salad dressings at Wal-mart)

Cut chicken into bite size pieces and cook in oil for about 3 minutes. Add onion for a couple minutes, then garlic and jalapeņo for about a minute. Add broth, bring to boil, add corn, beans, lime juice, and red pepper. Simmer for a few minutes. Add cilantro. Ladle into soup bowls, and top with cheese and/or chips, if desired.

This is a quick and easy version of a Chicken Tortilla soup. I like that you can make it one day and reheat and serve the next. It's probably better the next day.
