4 lbs. ground turkey (or beef)
1/2 c. chili powder
1 tsp-2 T. red pepper
2 T. olive oil
1 onion, diced
1 red pepper, diced
1 green pepper, diced
2 cups red wine
4-6 cloves garlic, minced
1/8 -1/4 c. paprika
1/4 c. cumin
1/4 c. oregano
1 T. basil
salt & pepper to taste
1 large can tomatoes, diced
2 cups tomato sauce
1 large can dark red kidney beans, rinsed
1 can light red kidney beans, rinsed
1 large can black beans, rinsed
1 can white beans

Directions:
Directions:
Saute onions in olive oil until clear. Add peppers, 1/2 cup wine, and garlic; saute 1-2 minutes. Add ground turkey and brown meat. Add chili powder, red pepper, paprika, cumin, oregano, basil, salt & pepper to taste.
Add diced tomatoes, wine, and tomato sauce; stirring well. Add the beans. Stir well. Bring to a boil. Adjust seasoning to desired level of "heat" and taste. Simmer for about an hour. Serve warm, though I eat it cold too.
If you want a thicker sauce, make a roux with mace flour and stir it in.

This has a little bite to it, but Steven likes his chili with more "heat" so he adds more chili powder, and Tabasco sauce to his dish.
