1c granulated sugar
3/4c vegetable oil
2 large eggs
1 1/2 c all-purpose flour
1 tsp baking soda
1 tsp cinnamon
1/8 tsp salt
1 1/2 c grated carrots
1/2 c chopped walnuts

Directions:
Directions:
Preheat oven to 350º. Grease and lightly flour a 9x5 inch loaf pan.

Combine granulated sugar, vegetable oil and eggs in a large bowl and mix well.
Sift flour, baking soda, cinnamon and salt into a medium bowl. Add to sugar mixture and mix well.
Add carrots and walnuts to flour mixture and mix well. Spoon into prepared loaf pan.
Bake bread until a toothpick inserted in the center of the loaf comes out clean, about 1 hour.

Cool in the pan for 10 minutes.

Transfer loaf to wire rack to cool completely.
