Two cups flour
2 cups sugar
4 eggs
3 cups grated carrots
1 1/2 cups oil
1 tsp. vanilla
2 tsp. cinnamon
1/2 tsp. salt
1 tsp. baking powder
2 tsp. baking soda

Cream Cheese Frosting:
1 cup chopped pecans
1 box powdered sugar
1 8 ounce package cream cheese
1 stick butter
1 tsp. vanilla

Directions:
Directions:
Mix all dry ingredients. Add the oil, eggs, and vanilla and blend well. Fold in the grated carrots. Pour into 3 greased and floured 9 inch cake pans. Bake for 30 minutes at 350º.

Frosting:
Cream together the cream cheese and butter (softened). Mix in the powdered sugar, vanilla, and pecans. Add small amount of milk if needed to spread on cake.
