Two pounds small boiling onions
4 tbsp. unsalted butter
4 tbsp. flour
2 cups milk
1/2 cup heavy cream
1/2 package onion soup mix
Chopped parsley
Salt and pepper to taste

Directions:
Directions:
Cut away ends of onions and peel. Cut a criss-cross on the ends to prevent the onions from splitting during cooking. Boil onions and onion soup mix uncovered in water for about 30 minutes until tender. Remove onions and reduce remaining liquid to one cup. Combine milk, cream, and flour and whisk until smooth. Stir the mixture into the water and cook over low heat until thick. Return onions to the pan and add butter and remove from heat. Add parsley, salt, and pepper to taste and cover until ready to serve.
