5 Rock Cornish hens
1 egg
1 tbsp. water
1 tbsp. oil
salt and pepper
3/4 c. pecans
1.2 c. bread or cracker crumbs

Directions:
Directions:
Thaw hens, remove giblets, wash and pat dry. Preheat oven to 400ºF. Mix egg, water, oil, salt, and pepper and brush over the tops of hens and legs.
Grind the nuts and the crumbs until fine, using a food processor or blender. Do not overblend. Pat the crumbs over the hens.
Place hens on a roasting rack in a roasting pan in the oven for about an hour or until done (180ºF)
Baste occasionally with pan juices or melted butter using a spoon.
