4 c. rhubarb chopped to 1/2-3/4 in.
1 c. sugar
fresh mint to taste (optional)

Directions:
Place chopped rhubarb in a double boiler. Pour sugar over the top. Chopped fresh mint can be added. With water in the bottom of the double boiler, bring to a boil, with a lid tightly covering the top. Turn down heat and simmer for 1/2 hr. Stir the rhubarb mixture and simmer for another 1/2 hr. Can be consumed as is or over any ice cream dish, simple cake or other dessert. Place any leftover sauce in a glass jar and refrigerate.
