5 eggs, separated
1 c. shredded cheddar cheese
1 c. milk
3 T. butter
3 T. flour
1/2 tsp. mustard powder
1 tsp. salt
1/4 tsp. crushed pepper

Directions:
Directions:
Beat the egg whites to peaks. Preheat oven to 375º and prepare a high baking dish ( a ceramic or glass bowl works well) by greasing it well and dusting it with a little flour.
Combine flour and spices in a small dish. In a saucepan over low heat, melt the butter. Stir in the flour mixture. Add milk and stir over medium heat until thickened. Add cheese and stir until melted. Remove mixture from heat and stir in egg yolks until fully combined.
Fold in 1/2 of the egg whites completely, then fold in the rest as much as desired. Turn mixture into prepared baking dish. Bake for 35-40 minutes until high and golden. Consume immediately. However, leftover cold souffle is equally delicious!
Variations can have added sliced or chopped ingredients such as mushrooms, broccoli, or other vegetables of your choice.
